- Turkey burgers. Can be made under 30 minutes and is yummy. (Be sure to incorporate ricotta cheese into the ground turkey mixture for more moisture).
- Pasta with a tomato sauce. Yeah I know, pretty standard fare, but it can be really good when done right. Sometimes I cheat with a store-bought sauce (I like the ones from Delallo) but I actually really just like using a can of San Marzano tomatoes, onions, garlic, some seasonings, and maybe a bit of pancetta or bacon. Simple yet good.
- Bak kut teh is this great aromatic Chinese pork soup famous in Malaysia and Singapore that uses this complex blend of herbs and spices as its flavor base. I use it with chicken instead of pork most of the time due to the lower fat and lower price, but it's still great. I just bought the pre-packaged packets of the spice blend over at Malaysianfood.net and I've made three batches so far. Good stuff.
- Rice mixed with various leftovers. This is the standard catch-all for nights when we're able to stretch our leftovers, and I can sometimes make fried rice with a bit of egg and soy sauce. If I'm feeling naughty I'll grab a can of spam and it'll be spam fried rice. Hey, don't knock it til you've tried it.
- Adobo (Filipino version). One of my most favorite dishes because it's so gosh-darn easy to make. Soy sauce, vinegar, and meat. That's it. And the resulting dish can often last for days because I usually make a huge batch at once.
Every once in awhile I make enchiladas or some chicken breast dish, but they usually take a little more preparation than the above (I can be somewhat of a perfectionist when cooking) and I'm usually pretty lazy, so these 5 are my go-to dishes when I just don't feel like having take out again.
